Darrell’s Mom’s Famous Spelt Bread


  • Combine 1/4 cup of warm water with 1 tsp of sugar
  • Stir well and sprinkle with 2 tsp. of yeast, and let rise.
  • 4 cups of spelt flour1/2 tsp of salt
  • 2 tbsp olive oil
  • 2 tbsp of sugar
  • 1 egg
  • 1/4 cup of sesame seeds or millet seeds (or half and half)
  • 2 tbsp of hemp hearts
  • 1 cup of warm water

Combine flour, salt, sugar, seeds and hemp hearts. Make a well in the center. Combine olive oil and beaten egg adn add to centre. Stir in yeast and warm water. Mix together. Knead well. Let rise 45 minutes. Knead well second time and let rise another 45 minutes. Put in greased bread pan and let rise about 25 minutes. Bake at 375 degrees for 30 minutes.

**Spelt bread tends to dry out quickly so slice it when cool and freeze it. I also find when rising it is better to cover the pan with food wrap rather than a cloth. This keeps it from drying out as well.
