Phil’s No flour “Hermit” cookies

1/2 C butter
1/2 C or more coconut palm sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
2 – 3 C nut meal (walnut, almond, pecan …)
1 C unsweetened shredded coconut
1 C chopped nuts (walnut, almond, pecan …)
1 C dark chocolate chips or dried fruit
In a mixing bowl, melt butter, add sugar & eggs, add dry ingredients, stir to thick cookie dough
Spoon onto two lightly greased cookie sheets (makes 48 cookies) OR
Roll onto two cookie sheets to about 1/8″ thick (waxed paper between dough & roller) and score squares
Bake at 300 deg F for about 8 minutes then turn off oven and leave in another 8 minutes or longer for crisp cookies
