Cinnamon Coffee Cake
2 1/2 c.almond flour
1/4 tsp sea salt
1/2 tsp baking soda
1/2 c walnuts or pecans, coarsely chopped
1/2 c raisins light or dark
1/4 c grapeseed oil
1/4 c honey or agave nectar
2 large eggs
2 Tablespoon cinnamon
2 Tablespoon grapeseed oil
1/4 honey or agave
1/2 c slivered almonds or crushed pecans
Pre heat oven to 350 degrees F . Grease an 8×8 square baking dish with grapeseed oil and sprinkle with almond flour.
Combine almond flour, salt, baking soda, walnuts, and raisins in a large bowl.
In a medium bowl, whisk together egg, oil, honey and eggs.
Stir the wet into the dry until thoroughly combined.
Spread the mixture in the baking dish.
To make the topping, combine the cinnamon, oil and honey in a bowl.
Spread over the top of the cake and sprinkle on the nuts.
Bake 25-35 minutes . Let cool in the pan for upward to an hr. then serve.
