SPINACH – WALNUT PESTO

Ingredients

1 cup walnuts

2 tbsp minced garlic

½ cup olive oil

3 tbsp lemon juice

¾ tsp salt

1 tsp pepper

¼ tsp cayenne

1 ½ tbsp dried basil

Instructions

Puree in food processor until smooth.

Gradually add 1 large box of spinach and 1/3 cup of parsley or cilantro until pureed.

Great as a dip; with avocado and lemon for lunch; on pasta or stirfry. A good way to get daily greens.
