1/2 Cup of nut meal or nut flour (almond, walnut, pecan)
1/4 Cup of coconut flour
1/4 Banana mashed (optional)
2/3 Cup of berries, raisins or chopped dates
1/2 Tsp. baking soda
1/2 Tsp. vanilla extract
1/4 Coconut sugar (low glycemic) (optional is coconut flour(sweet), as well as bananas)
Preheat oven to 350 Fahrenheit.
Melt oil if needed and add sugar.
Beat eggs, add to oil/sugar and add vanilla.
Mix flours and baking soda. Gradually stir into egg mixture, alternating with fruit and nuts. Some nut or coconut flour may be needed to break up lumps.
Bake in stick-free muffin tin for approximately 15 minutes.
Makes 1 dozen muffins.
